This week we’re in San Diego for the Craft Brewer’s Conference, so we took some time to sit with Greg Koch from Stone Brewing Company, and Brandon Sieminski from Iron Fist Brewing Company to talk about what they will take from the CBC back to their brew house’s.

We enjoy this discussion of the CBC from the larger brewery vs smaller brewery perspective while enjoy a traditional favorite from San Diego, Stone’s Pale Ale.

This year , the CBC also hosted the World Beer Cup, so we also take a few minutes to talk with Luke Nicholas, the “god of Epic”, to get an idea of the judging process in the World Cup and how all that works.

Stephen is clearly hung over, Matt can’t nail down his grammar, Brandon refuses to woo, and Greg’s in a kilt!

This week we enjoy the 13th Anniversary ale brewed by Stone Brewing Co for Bottleworks in Seattle WA. A crazy brew that incorporates 13 different grains & 13 different hops.

We also have a special guest on the show, Sean McNew ( @wagnis83 ) a buddy of ours from the area to help us drink this tasty treat.

John reads the bottle, which doesn’t leave Stephen impressed at all, but what does he know, he compares this beer to Chimay Blue with smoke, so we leave it to Matt to describe the real flavor of this beer.

On Master Pairings with Dr. Bill, Stephen joins Bill in the kitchen for some Calzones, that do not contain any oysters or brussel sprouts. The Calzone is paired with a delicious St. Martin Dunkler Bock from Aktienbrauerei.

This week, we drink a selection of fantastic beers from Almanac Beer Co, a small brewery out of San Francisco that is all about local sustainability and great beer! We start off with the 2011 Farmhouse Pale, brewed with plums and then after Master Pairings we jump into the 2010 Summer ale.

We got these great beers from Mike Sardina (@msardina) who is awesome, so we thank him.

John is all backwards, Stephen is full of phlegm, and Matt is actually conscience this week!

On Master Pairings, Matt finally joins Bill in the kitchen, and Bill pairs a delicious Chicken & Dumplings paired with the classic Belgian Golden, Duvel.

This week we visit Dr. Bill’s “new” cellar to open a couple of amazing beers from Lost Abbey .. we start off with a silver foil 2002 Cuvee de Tomme and then complete it with a side by side of 2012 release of Cuvee de Tomme.

Matt was going to join us, but he found a comfortable spot on the floor of Bill’s living room and sawed some logs instead of coming out and drinking with us. Bill expertly demonstrates how to save a cork that has disintegrated over time. Sami, the pooch, joins us to chill on the floor.

We talk about the early days of beer releases and how they have changed over time, and basically just enjoy a delicious piece of craft beer history.

This week we enjoy a couple of fantastic saison style beers from a new co-op brewery out of Oregon called Logsdon Farmhouse Ales. Logsdon, founded by David Logsdon who originally founded Wyeast.

John actually thinks Stephen is funny, Matt’s got his baby face on, and none of us are suggesting that brewers have sex with sheep.

On Master Pairings with Dr. Bill, Stephen joins Bill in the fridge for a dish that he actually likes going into the pairing. Spaghetti Carbornara paired with Spaten Optimator.

After Master Pairings, Matt needs to calm down .. Stephen crosses the line .. again, and John obsesses about how long to let his Saison age.

This week we’re drinking a delicious blood red ale Evil Twin from Heretic Brewing Co. the newish brewery from everyone’s favorite home brewer turned pro Jamil Zainasheff.

Stephen pours for hours, Matt determines a home brewer pecking order and John kills bugs.

When we finally get around to drinking beer, Stephen asks the audience a random question for the week … Should every overly hoppy beer be deemed a West Coast Style? Submit your answers to us at comment@newbrewthursday.com.

On Master Pairings Bill makes Stephen finish all his vegetables, with a pairing featuring a Rauchbier from Aecht Schlenterla and some deliciously cooked brussel sprouts. Stephen stalls for as long as possible before realizing that Bill makes a mean brussel sprout.

It’s the Hopocalypse! We’re drinking two amazing IPA’s from Drake’s Brewing Co, the Green label double IPA and the Black label triple IPA. Which Stephen immediately declares being as good or better then the Pliny equivalents.

Stephen is moody with IPA’s, John doesn’t want to say “Bam” and Matt is giggly.

In the kitchen, Dr Bill brings Stephen in for a Master Pairings of Oysters on the half shell with O’Hara Dry Irish Stout. Stephen is afraid of the Oysters, and the fish mongers … and swears never to eat them again, regardless of how awesome the pairing was.

After Master Pairings we aimlessly banter about a completely different Master Pairings that you may remember from our Hopslam/Abrasive Ale episode.

Stephen can’t drink World Wide Stout, which deeply offends Matt, and John just thinks that Stephen needs to sit on his bottles.

John gets to drink a new beer ( Black Label Hopocalypse ) as well as a new hop, Zythos .. so he is very excited. Matt is excused while we have a Pliny the Younger comparison discussion.

In the end we all agree that you need to get your hands on some Drake’s!
